Auction Meeting Salad - Golden Delicious by April Brown Auctioneer

Auction meetings are always better with nutricious food that tastes great. This is one of my favorite recipes because of the ease of switching up ingredients with subsitutes and extra flavors. Meat can be added to this vegetarian version. Make sure that vegetarians have plenty of healthy choices.  Encourage the volunteers to eat throughout the evening rather than waiting for a set time. Let everyone know great food awaits them and that they can "come as you are". 

I made a different version today by switching up a few ingredients.  The original version below was a gift from my friend Marilyn. The recipe she uses is called Curried Chutney Coleslaw. Can be make ahead to marinate and chill. Tastes great at room temperature too.

My Golden Delicious Collaboration Salad by April Brown.

Dressing:

2/3 cup mayonnaise (Best Food brand)

1 1/2 tsp curry powder

1 tbl sugar

1 tbl garlic past or 1 large clove finely minced

1 shallot (I think green or sweet onions would taste better)

1/8 tsp Worcestershire sauce

1/2 tsp lemon juice

1 1/2 tsp soy sauce

1 1/2 tbl red wine vinegar (or your choice)

1/3 cup mango chutney (I substituted a gala apple tossed in honey)

Salad:

Chopped cabbage (1 bag or half large cabbage) (I think red and white would be good) I used a bag of shredded cabbage.

Dried ranberries

Chopped pecans or walnuts (I used slivered almonds)

This is "crack" and makes about 8 servings or 2 dinner salads. I plan on eating the whole salad by bedtime.
